Brad Feickert is the Owner and lead butcher at the shop. Born and raised in Purceville, Virginia, Brad began his culinary career at the early age of 16. Mid way through college he knew he had a passion for cooking and wanted to dive deeper into the culinary arts. After graduation he decided to attend Sea Islands apprenticeship program down in Georgia. After a year of working in the majority of Sea Islands restaurants including the highly acclaimed “Georgian Room”, he knew he wanted to explore the history and techniques of cooking. With that in mind he took his career to the next level by attending the ICC in Campbell, CA. While attending the ICC he worked at a dedicated farm to table restaurant called the Haymarket as the sous chef. Upon graduation from the ICC he decided to take his career back to the east coast and work for Bryan Voltaggio in his fine dining restaurant VOLT. Following his stint at VOLT he traveled to Australia to expand his culinary knowledge. Brad worked at esteemed restaurants such as Attica and Brae. After a year abroad he returned to Northern Va and took over the newly founded Oz in Arlington, Va. After 4 years he was introduced to his partner Chris Brown and they decided to partner up to start SOKO

FARMS WE WORK WITH

Six generations ago, John Langenfelder emigrated from Germany in the late 1840’s and settled in Baltimore County, Maryland. At first, the small family farm produced vegetables and raised animals for his family’s use. To supplement their income during the Great Depression, the family began to raise extra pigs and sell the meat to neighbors and friends. To meet the demand, more pigs were raised and the Langenfelder family farm gradually evolved from growing vegetables to raising animals and field crops. Thirty years ago, Dutch and Pat Langenfelder and their children, Jennifer, Bill and Kristen, the 5th and 6th generations, relocated the family farm to Kent County on Maryland’s Eastern Shore to continue the legacy.

In 1986, Ed Burchell embarked on what he thought would be the beginning of his retirement. He bought a quiet farm tucked in the hills of Monkton, Maryland. Bought a few cows to graze the property, so that he wouldn’t even have to mow the grass.It didn’t take long for Ed to start thinking more seriously about his cows. He quickly became convinced that, with care and attention, he could create a better-tasting product.Ed met cattle expert, Dean Bryant in 1996, and with that, Roseda Farm was born. Dean taught Ed the essential elements of raising cattle for juiciness and tenderness. He proved that with the right genetics, the right feeding, and the right watering and health practices, you could breed cattle that were superior from pasture to plate.

Seven Hills Food is a multifaceted team of passionate individuals committed to fostering a sustainable regional food economy here in Virginia. We have begun with an abattoir and a meat company. These projects will make food from Virginia and the Mid-Atlantic more readily available in our region and beyond. By developing a network of producers, processors and distributors, Seven Hills Food will facilitate the growth of our area's rich food ecosystem.
